Mushroom Soup by Peg Carter

Soup’r Delicious 2012

This soup was featured on the cafe menu during Soup’r Delicious 2012 to help raise funds for charity.

Ingredients:

1lb mushrooms
6T butter
2c finely chopped onion
1/2t sugar
1/4t pepper
1/4c flour
1c water
1 3/4 c chicken broth
1c dry vermouth or white wine

Recipe:

-Slice 1/3 of the mushrooms and chop the rest
-In a large pot, melt the butter
-Add onions and sugar and saute over medium heat. Stir frequently for about 15 minutes or until golden
-Add mushrooms and saute for 5 minutes
-Stir in flour until smooth, cook for 2 minutes. Stir constantly. Pour in water and stir until smooth.
-Add all remaining ingredients and heat to a boil.
-Reduce heat and simmer uncovered 10 minutes

To reheat, heat to slow boil, cover, simmer slowly

Tortellini & Spinach by Lisa Balschunat

This soup was featured on the cafe menu during Soup’r Delicious 2012 to help raise funds for charity.

Ingredients:
9oz tortellini
1 medium onion, chopped
9 cups chicken broth
2t Italian seasoning
salt & pepper
2T olive oil
2oz pancetta
3 cloves garlic, minced
1 can crushed tomato puree (16oz)
8oz fresh spinach, coarsely chopped
1 cup romano cheese
3 bay leaves

Recipe:
Heat oil in stock pot. Add onions, garlic, and pancetta. Lightly brown, 10-15mins. Add stock and herbs. Bring to boil. Stir in tortellini. Simmer uncovered until tortellini are cooked, 10-12 mins. Add crushed tomato. Simmer 5 mins. Add spinach - cooked until wilted. Season with salt and pepper. Sprinkle with cheese.

Farmers Market Soup by Sharon Stortz

“It was my mother’s recipe but we added the kidney beans for health!” - Sharon

Ingredients:

1/2 c. minced onion
4 cloves minced garlic
2 tbsp. butter
2 tbsp. flour
2 cans chicken broth
2+ zucchini, sliced
2+ yellow squash, sliced
1 large can chopped tomatoes, with juice
2 cans red kidney beans, undrained
1/2 tsp salt
1/2 tsp sugar
pepper to taste

Recipe:

In a stock pot over medium heat saute onion and garlic in butter until golden. Add flour. Cook and stir for 1 minute. Add broth and stir. Bring to boil and thicken. Add zucchini, squash, tomatoes, kidney beans, salt, sugar, and pepper. Bring to boil

Harvest Soup by Lawrence M. Hart

This soup was featured on the cafe menu during Soup’r Delicious 2012 to help raise funds for charity.

Ingredients:

2 quarts water
2-3 pkgs Knorr Homestyle Concentrated Chicken Stock (paste)
1 1/2 lbs Jimmy Dean Maple Flavor Sausage
5-6 slices bacon + drippings
1 each - red, orange, yellow, + green peppers, diced
4-5 medium potatoes, Yukon Gold, diced
3 stalks celery cut in 1/2 inch pieces
1 large red onion cut in 1/2-3/4 inch pieces
2 tbsp minced garlic
4-5 carrots cut in 1/2 in pieces
1/2 tbsp oregano
1 tbsp Hungarian Sweet Paprika
1 tbsp Maggi seasoning
1 tsp hot sauce

Recipe:

Add concentrated stock to water and cook over medium heat. Fry bacon slices til almost crisp. Remove from heat and crumble. Add to stock. Fry sausage in bacon grease. Remove from heat and set aside. Saute onion in sausage and bacon grease, set aside. Add potatoes, celery, and peppers. Cook on medium heat about 1/2 hour until tender. Add oregano, paprika, Maggi, and hot sauce. Add vegetables, and bacon too. Add sausage and drippings last. Simmer 5 minutes and serve.
(Alternate: You can roast the peppers for a slightly different flavor)
